Cherries And Tomatoes In A Salad

Yes, I know cherry season is over and this post is late.  But I’m busy okay? And everyone knows I’m often late in virtual world.  I mean, this entire site is practically two years in the making.  Life happens.  And then there’s cherries.  This salad is so easy and it’s a tasty way to eat cherries and get through some of your tomatoes at the same time.  The two are surprisingly complimentary.  You can use cherry tomatoes or regular tomatoes.  Whatever you do, don’t try this recipe with store bought tasteless tomatoes unless they’re heirlooms….. AKA Ugly Tomatoes.  The dressing is a snap.  Use a high quality honey because you’ll be able to taste the difference.  You can have this recipe together in minutes and it’s quite impressive.

Cherries And Tomatoes In A Salad

Ingredients

For the salad:

  • 1 bunch tarragon stems removed
  • About a pound of black cherries halved pits removed
  • About a pound of cherry tomatoes halved

For the dressing:

  • 1/4 cup balsamic vinegar
  • 1/2 extra virgin olive oil
  • 2 tablespoons honey
  • Kosher salt and fine ground pepper to taste

Instructions

  • Combine the cherries and tomatoes on a platter.  Combine all the ingredients for the dressing in a jar with a lid and shake vigorously until emulsified.  Pour the dressing on the cherries and tomatoes, garnish with tarragon leaves and serve!
