Lazy Carne Asada

Ingredients

  • 1 lb leftover steak we used filet mignon sooked sous vide
  • 2 cups sliced sweet peppers
  • 1 medium onion diced
  • Juice from 2 limes
  • 1 bunch cilantro chopped
  • 12 white corn tortillas
  • 1 bottle Yuzu hot sauce
  • 1/4 cup Lawry's carne asada seasoning
  • 1 tablespoon peanut oil or other high burning point cooking oil

Instructions

  • Coat the meat in half of the lime juice and the Lawry's seasoning in a bag, suck out all the air, and let it rest on the counter for about an hour.  Meanwhile, chop up the peppers.
  • Combine the onion, cilantro, and remaining lime juice in a bowl and set it aside.
  • Warm the tortillas individually in a dry pan over medium low heat.  Store cooked tortillas in foil or in a tortilla warmer.
  • In a cast iron skillet on medium high heat, cook the oil until shimmering.  Then add the beef and the peppers, flash frying for about 10 minutes or less.
  • Spoon beef and pepper mixture into warm tortillas, top with the onion cilantro mixture, and finish with the Yuzu hot sauce.  It's amazing served with beer!
