Hub’s Peanut Butter Cookies

I’m a cookie person as far as dessert goes.  Ok, a cookie and cake person.  Alright fine!  I’m a cookie, cake, and brownie person.  Happy?  Geeze!  As cookies go, however, peanut butter cookies are my least favorite.  They’re just so….plain.  I like a snazzy cookie.  I like the kind of cookie you can’t stop eating.

And then it happened.  Hubs made peanut butter cookies for some beer event we were hosting.  We were dating at the time and I felt obligated to try the peanut butter cookies he made.  I had to be polite.  I was prepared with a peanut butter porter to wash that gaggy cookie down with.

Oddly, no gagging ensued.  There was something amiss here.  I suddenly wanted another bite.  “What is happening?!”, I heard myself scream inside my own head.  I….must….resist…..this…..cookie!  But I couldn’t.  I found that I had reached for a second cookie because I had gobbled down the first! And he was just standing there smiling….completely unaware of the peanut butter cookie scandal happening in my face.

Hub's Peanut Butter Cookies

Ingredients

  • 1 cup flour
  • 2/3 cup brown sugar packed
  • 1/2 cup white sugar
  • 1/3 cup old fashioned oats
  • 1 egg
  • 1 stick butter softened
  • 1/2 cup creamy peanut butter
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla

Instructions

  • Preheat the oven to 350 and line two baking sheets with parchment paper.  In a stand mixer fitted with the beater paddle, combine the peanut butter and butter on medium high until combined, about a minute or so.
  • Add both sugars, the egg, and the vanilla, beating for about 3 minutes.  Stop the mixer, scrape down the sides, and return to beating on medium speed.
  • Add the baking soda, baking powder, and oats, beating for another 3 minutes.  Turn the mixer down to low, and slowly add in the flour, beating until thoroughly combined, about 3 more minutes.
  • The dough can be chilled for baking later or can be rolled into 1 or 2 inch balls.  Do not flatten them.  Bake on the middle rack for about 7 minutes or until they just start to crack across the tops.
  • Cool on racks and try not to eat them all at once.
