Sink Frittata"},"content":{"rendered":"<p>I don&#8217;t often cook breakfast and I eat it even less.\u00a0 Or maybe it&#8217;s the other way around.\u00a0 Anyway, Hubs was so great through our snow storm that I was spurned to do something nice for him.\u00a0 And he loves eating breakfast.\u00a0 He really loves eggs.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-large wp-image-7596\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/p>\n<p>I had all the fixings for a pretty nice frittata.\u00a0 Tons of eggs, some frozen leaf spinach, half an onion, some cheese, some leftover sauteed mushrooms, and a pound of bacon.\u00a0 I even had some buttermilk.\u00a0 I got my cast iron skillet down and went to work.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-large wp-image-7595\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/p>\n<p>Hubs woke up in kind of a crappy mood.\u00a0 I don&#8217;t know what his problem was.\u00a0 Actually, I do know.\u00a0 He likes to sleep in and I was up and out to the living room at 4:30 am.\u00a0 I have an early riser habit.\u00a0 I like getting things done while everyone else is alseep.\u00a0 I&#8217;m trying to do less of that.\u00a0 But sometimes you just wanna peruse garden catalogues while watching a dumb show on Netflix.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-large wp-image-7594\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/p>\n<p>His mood changed after his second slice of frittata and we ended up getting to work on dinner&#8230;.the all day short ribs.\u00a0 I had asked him to make some rolls.\u00a0 Poor guy&#8230;.he was having yeast problems.\u00a0 Teeheeee!!!\u00a0 He ended up needing to run to the store.\u00a0 Good thing, too&#8230; I needed a wedge of blue thin slices of onion<\/span><\/li><li class=\"wprm-recipe-ingredient\" style=\"list-style-type: disc;\"><span class=\"wprm-recipe-ingredient-amount\">1\/2<\/span>&#32;<span class=\"wprm-recipe-ingredient-unit\">cup<\/span>&#32;<span class=\"wprm-recipe-ingredient-name\">shredded cheese<\/span>&#32;<span class=\"wprm-recipe-ingredient-notes wprm-recipe-ingredient-notes-faded\">I used cheddar<\/span><\/li><\/ul><\/div><\/div>\n<div class=\"wprm-recipe-instructions-container wprm-block-text-normal\" data-recipe=\"7599\"><h3 class=\"wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Instructions<\/h3><div class=\"wprm-recipe-instruction-group\"><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-7599-step-0-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Preheat the oven to 400.\u00a0 Fry the bacon in a cast iron skillet on medium heat or lower if the fat starts to smoke.\u00a0 Remove the bacon and set aside.\u00a0 Pour off all but about a tablespoon of bacon fat.\u00a0 If the pan gets too hot just take it off the burner.\u00a0 Cast iron retains heat.<\/div><\/li><li id=\"wprm-recipe-7599-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Add the butter to the pan and saute the onion for about 5 minutes or until just soft.\u00a0 Add the mushrooms and the spinach, sauteeing for about 5 or 10 minutes.\u00a0 Remove some of the mixture...about a half cup or so...and set aside.\u00a0 I removed my pan from the burner here.<\/div><\/li><li id=\"wprm-recipe-7599-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Chop the bacon.\u00a0 Whisk the eggs in a bowl with the milk, garlic salt, and pepper.\u00a0 Stir in the chopped bacon, reserving some on the side....about 2 tablespoons.<\/div><\/li><li id=\"wprm-recipe-7599-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Pour the egg mixture into the skillet and stir to combine.\u00a0 Add the reserved bacon and the reserved spinach mushroom mixture around the top of the egg mixture and bake in the oven for about 15 minutes, adding the shredded cheese halfway through.\u00a0 It's done when the center is set and the sides start to
