day, we had Molly and Kip over (Hub&#8217;s sister and brother in law), and they came again last night.\u00a0 They just moved back here and we were excited to introduce them to our friends.\u00a0 I conglomeration of stuff.\u00a0 Salad dressing chicken, slow roasted pork for some tortillas, beans and rice, macaroni salad, escabeche, greens beans in oven dried tomatoes, and a carrot cake.\u00a0 Lots of goodies to pick at.\u00a0 All easy dishes, but fan favorites.\u00a0 Especially me!\u00a0 Ok, fine.\u00a0 They&#8217;re MY favorites.\u00a0 We ate an entire gallon of escabeche and someone snagged the smaller jar off the counter.\u00a0 I&#8217;m looking at you Dawn!<\/p>\n<p><img loading=\"lazy\" class=\"alignnone wp-image-7403 size-large\" au vin.\u00a0 Pfffttt.\u00a0 I did not want to go to the grocery store.\u00a0 His favorite flavor of cake is chocolate.\u00a0 So I made a carrot cake.\u00a0 I&#8217;m starting to see a theme here.\u00a0 Well at least there&#8217;s chicken in there!\u00a0 Besides, we&#8217;ve been doing a lot of fancy fussy food.\u00a0 It was time for food that makes you lick your fingers.<\/p>\n<p><img carrot cake?\u00a0 I make my own, thank you very much.\u00a0 Every year that I&#8217;ve done a chocolate cake from scratch for his birthday, it&#8217;s come out dry.\u00a0 Remember me?\u00a0 Terrible baker?\u00a0 Yeah.\u00a0 He chokes it down every year, bless his heart.\u00a0 This year I wanted to not feel dread.\u00a0 I wanted to hear people enjoying my confection rather than reassuring me that the cake is dry but delicious&#8230;..so carrot cake it is!<\/p>\n<p><img loading=\"lazy\" class=\"alignnone wp-image-7398 size-large\" crowd over.\u00a0 Jessie and Joe, Amanda and Matt, Dawn and Rudy, and Molly and Kip.\u00a0 Woohooo!!!\u00a0 I love these people!\u00a0 I can wear my pajamas, everyone is relaxed, no one cares if there&#8217;s curse words, and we all love beer and wine.\u00a0 They even let me do paper plates!\u00a0 Pam and Sandy weathered the wild bunch and joined the raucous gathering and we were all so glad class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Preheat the oven to 350.\u00a0 Grease and flour two round cake pans.\u00a0 Alternatively, you can line the cake pans with foil and spray them with oil.\u00a0 In a bowl, whisk together all the dry indredients except the sugar and set aside.<\/div><\/li><li id=\"wprm-recipe-7416-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">In a stand mixer with the paddle attachment, beat all the wet ingredients together on medium low and then add the sugar.\u00a0 Beat together for about 5 minutes.<\/div><\/li><li id=\"wprm-recipe-7416-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Lower the mixer speed to low and add the dry ingredients.\u00a0 When it's all incorporated, add the carrots and then the pecans.\u00a0 Fill the two cake pans equally and bake for about 30 minutes or until a knife inserted into the center comes out clean.<\/div><\/li><li id=\"wprm-recipe-7416-step-0-3\"
