Mom Chronicles Dec. 13th"},"content":{"rendered":"<p>It&#8217;s December, which is full of treats, so today I&#8217;m doing a treat recipe.\u00a0 This was&#8230;and still is&#8230; my kid&#8217;s favorite treat.\u00a0 It&#8217;s a cake my gramma used to make.\u00a0 This cake was one of those things she&#8217;d make just for the two of us and we wouldn&#8217;t share it with anyone.\u00a0 Our secret stash.\u00a0 She was that way with Girl Scout cookies, too.\u00a0 This was a recipe she picked up during the last world war, when Americans were on rations for certain staples like eggs and butter.\u00a0 You might know it as mayonnaise cake.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-large wp-image-7172\" In a cake.\u00a0 Weird.\u00a0 Technically, it&#8217;s Miracle Whip and some would argue that Miracle Whip is NOT mayonnaise.\u00a0 It&#8217;s salad dressing.\u00a0 But is it?\u00a0 Sure, it tastes different than mayonnaise, but it&#8217;s still white and gloopy.\u00a0 And mayonnaise made from scratch tastes vastly different than the stuff from the jar.\u00a0 So maybe jarred mayonnaise isn&#8217;t really mayonnaise either.\u00a0 I wonder how many times I can type the word &#8216;mayonnaise&#8217; in this paragraph.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-large doesn&#8217;t work with mayonnaise.\u00a0 It only works with Miracle Whip.\u00a0 If nothing else, Miracle Whip has the lock on this cake, even if you are a Miracle Whip hater.\u00a0 What&#8217;s particularly good about this cake is that it needs no frosting.\u00a0 In fact, frosting doesn&#8217;t even taste right with this cake.\u00a0 If you insist on having something on top, dust it with powdered sugar and add some fresh berries.\u00a0 We eat it plain.\u00a0 We&#8217;re purists.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-large wp-image-7171\" together with minimal effort.\u00a0 The ingredients are inexpensive~ish.\u00a0 I say &#8220;ish&#8221; because as a single mom, it was hard for me to justify a five dollar bill for a jar of Miracle Whip when a box cake mix hovered around a buck, but you get at least two cakes out of the regular sized jar and it was a treat, so I looked at it that way.<\/p>\n<p><img loading=\"lazy\" pennies you really are pinching pennies, it&#8217;s not just a quaint little saying.\u00a0 And oh the things I could do with a five dollar bill at the grocery store!\u00a0 Not to mention, box mixes require eggs and two eggs could be the difference between a meal or no meal, especially if breakfast was on the menu for dinner that night.\u00a0 Every single parent on the planet knows exactly what I&#8217;m talking about.\u00a0 So if I can get a chocolate cake and still have eggs to eat for dinner?\u00a0 That&#8217;s a win.\u00a0 And single parenthood ain&#8217;t exactly brimming with wins, so wprm-header-decoration-none\" style=\"\">Instructions<\/h3><div class=\"wprm-recipe-instruction-group\"><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-7222-step-0-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Preheat the oven to 350.\u00a0 Line a 9x11 cake pan with foil and lightly spray with baking oil.\u00a0 Whisk all the dry ingredients together, then add all the wet ingredients and stir in.\u00a0 Spread into the cake pan with a spatula and bake for about 30 minutes or until a knife inserted into the center comes out clean.\u00a0 Cool and cut into squares.<\/div><\/li><\/ul><\/div><\/div>\n\n<div class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\">*I use the tablespoons used for eating, not the tablespoons used for measuring....soup spoons.\u00a0 I suppose you could use measured tablespoons, but gramma never did in this recipes and neither do I.\u00a0 Also, I only use Hershey's cocoa for this cake.\u00a0 I've tried others when they were cheaper and it just doesn't have the same taste for me.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">**Gramma never used vanilla for this cake.\u00a0 I added it later as an adult so it's optional.\u00a0 Lately, the cost of vanilla has gone through the roof.\u00a0 If you omit it, you won't miss it at all, I promise.\u00a0 If the batter seems a little dry, just add a measured tablespoon of water or two
