Rainy Days And Lamb

I’m not sure what it is about cold rainy days that makes a body crave substantial food. It’s been raining here for days. Oregon, duh. I’ve spent so much time cooking for the past few days, that I’m kind of over it and I want something simple and fast. Sounds like a weeknight meal to me. It is Tuesday. But I also want bold flavor, something meaty, and something I can grab out of our meat freezer. And that my friends, sounds like lamb chops.
I don’t know about you, but I’ve never been a minty lamb person. I don’t hate it, but I don’t crave it. I’m more of a garlic lamb person. Yeah, I could get all choppy and do a bunch of prep mincing fresh garlic and some sort of greenery like parsley or rosemary. I have both. Or I could be lazy and break out the garlic salt. Don’t look down your nose at me, people. Tired cooks need garlic salt. Hey, at least it’s not as trashy as “seasoned salt”. Garlic salt is every exhausted single mom’s lifesaving magic fairy dust.
If you must be fancy, by all means, chop your heart out, mix it with a splash of olive oil to make a dry~ish paste and slather it on your lamb chops. It’s delicious. But I went the lazy route. Because I’m lazy. And I’m not sad about it. Also, I want to broil them to get the fat edges crispy and garlic salt won’t scorch like fresh garlic. So pffffttttt. I didn’t even have to make a vegetable because I had some left over. Glorious!

Broiled Lamb Chops
Ingredients
- 6 to 8 thick cut lamb chops
- Garlic salt
Instructions
- Liberally sprinkle the chops with garlic salt on both sides. Broil the chops for about 15 minutes turning once halfway through. And voila! Serve them with a vegetable of your choice.
