Green Beans With Dried Tomatoes

I’ll be glad when I get to the point where I’m posting about recipes that don’t have tomatoes in them. In the meantime, I made this little side dish to go with some mystery beef we smoked up the other night. I had some leftover green beans from Costco that I needed to use. That little five dollar package is deceiving. There’s easily enough for two dinners for four people in that little package. I had used mine for the minestrone and used the rest for this dish. There was enough for 6 adults and a toddler and that was with a few people having seconds!
I spooned some of my oven dried tomatoes into the Vita Mix, poured them onto the green beans, and sauteed it all together. That was pretty much it. Now I want to make more oven dried tomatoes. It was that good. Even my man child loved it and he’s not a fan of tomatoes (how is he even my kid?!) unless it’s marinara (oh, there’s my kid), pizza sauce (yep), or salsa (because duh, that requires chips).
Green Beans With Dried Tomatoes
Ingredients
- 1 lb fresh green beans I used half of a pack of the fresh organic green benas from Costco
- 1 cup pureed oven dried tomatoes
- 1 or 2 tablespoons olive oil
- 4 or 5 cloves fresh garlic
- Pepper to taste
Instructions
- Place green beans in a nonstick skillet, drizzle with a little olive oil....not too much because the tomatoes have oil in them also....and season it with as much pepper as you like. The oven dried tomatoes also have salt in them so avoid using any extra salt unless you like that sort of thing.
Next, puree about a cup of oven dried tomatoes with the garlic cloves in a blender and pour them over the beans. Toss them with tongs as they cook for about 10 to 15 minutes while they are still a kelly green in color.
